Healthy, thick, and creamy, this beet hummus is to die for, even for those that may not love beets. Not only is it beautiful (great to serve when having friends over for apps and wine!) Beets are packed with beneficial pytochemicals, which is what gives it its rich dark red/pink hue. They have been researched on their anti-inflammatory and anti-cancer properties. Not to mention they are high in fiber and high in vital vitamins and minerals. A TON of nutrition bang for your buck! Plus who doesn’t love this bright, magenta color?!
Not to mention, beets are also known for their ability to boost athletic performance due to their nitric oxide content. I even hit my PR with half marathons after drinking beet juice the morning of my race. Research shows nitric oxide can increase blood flow, improve lung function, and strengthen muscle contraction, helping athletes perform more efficiently, for longer. Pretty cool what food can do!
PrintThis hummus is as healthy as it is beautiful. The bright pigments in beets have powerful anti-inflammatory and disease-fighting properties, and this is an easy & yummy way to sneak in beets into your eating pattern!
Blend all ingredients in a high-powered food processor until smooth and creamy. Top off with extra olive oil and black sesame seeds if desired!
I love adding this hummus to wraps filled with lettuce, carrots, cucumber, and avocado, and using it as a dip for carrots and cucumbers! So many ways to enjoy this healthy & fun spread.
