Nourishing Vegan Beet Hummus

This hummus is as healthy as it is beautiful.  The bright pigments in beets have powerful anti-inflammatory and disease-fighting properties, and this is an easy & yummy way to sneak in beets into your eating pattern!

Ingredients

Scale
  • 1 can chickpeas (drained & rinsed)
  • 12 medium beets, chopped
  • 1 tsp sea salt
  • 1 TBSP olive oil or avocado oil (+ more for serving)
  • 2 garlic cloves
  • 1/4 cup tahini
  • 1 lemon, juiced
  • dash of black pepper
  • dash of turmeric
  • sprinkle of black sesame seeds, for serving

Instructions

Blend all ingredients in a high-powered food processor until smooth and creamy. Top off with extra olive oil and black sesame seeds if desired!
