I was in a rush and mixed together these ingredients to make some energy balls, but the batter was SO sticky. It just wasn’t the usual, so I couldn’t really roll them into balls. BUT, it was perfect to freeze into these fudge chews! These are absolutely incredible, I’ve already been snacking on them nonstop – and they are very much husband approved, too! Made with healthy ingredients like cashews, rolled oats, and hemp seeds -fiber, complex carbs, healthy fats, and plant based protein!

1 cup raw cashews
1 cup rolled oats
2 TBSP hemp seeds
1/4 cup drippy almond butter
1/4 cup maple syrup
1/8–1/4 cup raw honey
1/2 tsp vanilla extract
1/2 tsp cinnamon
dash of sea salt
Add oats and cashews to food processor, and blend on high until a flour-like texture is formed.
Add all remaining ingredients and continue to blend until dough is sticky and smooth.
Add 1 spoonful of dough to each square in a silicone icecube tray sprayed with coconut oil.
Let sit in freezer overnight. Enjoy cold! Keep in freezer until read to consume.
Vegan? Simply swap out honey with date syrup.

These definitely get soft quickly once taken out of the freezer, so I won’t be taking these to work, but they are perfect as an after dinner treat! They kinda remind me of caramel chews, but a little bit more like fudge with an almost icecream-like texture as they start to melt in your mouth. Absolutely delicious! These are also the perfect summer treat since they’re nice and cool…aka anything that is cold is necessary in this SC heat.
