So I finally opened up the dehydrator we got as a wedding gift and I’m starting to put it to good use with these insanely delicious Dehydrated Apricot, Date, & Cashew Butter Cookies! You can truly make them as chewy or as crisp/dry as you’d like with your own dehydrator settings. These are so simple, made with only 4 ingredients – and you can customize and play around with different flavors as you wish!
I never thought you could make cookies in the dehydrator, but it makes total sense! This is such as gooey dough with the dried fruit, that it helps to dry them out a bit in the dehydrator for the PERFECT texture!
PrintSimple, nourishing dehydrated Apricot, Date, & Cashew Butter Cookies are the perfect cookie! Packed with delicious fruit flavor, and extra protein from oats and cashew butter. These are an easy staple to keep on hand for a nutritious dessert or snack.
In a food processor, process dried fruit until mixed together. Add in remaining ingredients and continue to process until a sticky dough forms.
Roll dough into small bite sized balls, and then flatten into cookies. Place on tray, spaced apart, in dehydrator.
Heat dehydrator to 145 degrees and dehydrate for 6-8 hours.
Store in an airtight container and enjoy!
Do you prefer your cookies super chewy or a little bit drier? These Dehydrated Apricot Date & Cashew Butter cookies are the perfect blend between the two – and you can always take them out at any point in the drying process if you like the texture. Alternately, if you don’t have a dehydrator, simply bake in the oven at 250 degrees for 1 hour. Make them your own and enjoy!
