Easily can be made vegan and dairy-free using dairy-free butter and milk. I love dairy, so I used regular butter and 2% milk, and it came out perfectly! Make it your own. 🙂
PrintYou’re going to be hooked after one bite. The most delicious, creamy tomato-based pasta sauce that’s packed with nutritious ingredients! Easily made vegan with plant-based butter and milk. This dish is to die for!
1 garlic clove, minced
3 TBSP shallot, minced
1 TBSP olive oil
1 can diced tomatoes
1/2 cup chopped carrots
1 tsp balsalmic glaze or vinegar
Salt and pepper to taste
1/2 tsp sugar
Pinch of red pepper flakes
1 tsp+ Italian seasonings (dried oregano)
1 TBSP butter
1/4 cup milk of choice
1/2 TBSP tomato paste
1/4 cup raw cashews
2 TBSP nutritional yeast
1/4 reserved pasta water
1 box pasta of choice (I used Banza Cascatelli)
1-2 TBSP chopped basil
*Reminder: this recipe is using Banza pasta, therefore is Gluten free for those like me that struggle with gluten intolerance or Celiac Disease. Gluten free diets are only recommended for those with these medical issues or specifically prescribed by your physician. A gluten free diet is NOT any healthier than eating a regular diet with gluten.
