You’re going to be hooked after one bite. The most delicious, creamy tomato-based pasta sauce that’s packed with nutritious ingredients! Easily made vegan with plant-based butter and milk. This dish is to die for!
1 garlic clove, minced
3 TBSP shallot, minced
1 TBSP olive oil
1 can diced tomatoes
1/2 cup chopped carrots
1 tsp balsalmic glaze or vinegar
Salt and pepper to taste
1/2 tsp sugar
Pinch of red pepper flakes
1 tsp+ Italian seasonings (dried oregano)
1 TBSP butter
1/4 cup milk of choice
1/2 TBSP tomato paste
1/4 cup raw cashews
2 TBSP nutritional yeast
1/4 reserved pasta water
1 box pasta of choice (I used Banza Cascatelli)
1-2 TBSP chopped basil
*Reminder: this recipe is using Banza pasta, therefore is Gluten free for those like me that struggle with gluten intolerance or Celiac Disease.
