Chocolate Chip Cookie Dough Bliss Balls

Comin’ atcha with another healthy dessert to share with family and friends this holiday season – Vegan Choc Chip Cookie Dough Energy Balls! I’ve shared these on the blog before, and I’m sharing them again because they are SIMPLY. TOO. GOOD.

These are made vegan by using maple syrup and 100% date syrup for sweetness, as well as dairy-free vegan chocolate chips. Simple and delicious! No need or desire to make vegan? Feel free to use honey and regular choc chips, YUM!Both ways are delicious!

Trying different variations of these is so much fun…the best combination I’ve come up with is this tried-and-true recipe – and the KEY is to process/blend the cashews and oats FIRST into a fine powder and then adding in the sweeteners. You can even use oat flour if you’ve got some laying around.

Choc Chip Cookie Dough Energy Balls

Simple, delicious doughy bites of goodness for when your sweet tooth is calling. Packed with fiber, healthy fats, and natural sweetness. Your friends and family members will be hooked and will be shocked that they are gluten free & vegan!

Ingredients

Scale
  • 1 cup raw cashews
  • 1 cup rolled oats
  • 1/2 tsp vanilla extract
  • up to 1/4 cup maple syrup
  • up to 1/4 cup pure date syrup
  • dash of sea salt
  • 1/2 cup dairy-free chocolate chips
  • optional ‘superfood’ add ins: maca powder, cinnamon, collagen powder, ashwaganda, vanilla protein powder, ground flax, chia seeds

Instructions

Add oats and cashews to a food processor. Blend on high until a fine flour is formed.

Pour in maple syrup, vanilla extract and date syrup and continue to blend on high.

Sprinkle with sea salt. Add any additional add-ins as desired.

Continue to process/blend until a smooth dough forms.

Let dough sit for a few minutes while you measure out the chocolate chips.

Fold in chocolate chips and roll dough into small bite-sized, round balls and set aside.

Repeat until all dough is used. Keep in fridge and enjoy within a few days!
