My parents have two gorgeous fig trees in their backyard, and let me tell you, I’M JEALOUS. I love figs. Dried or fresh, they are one of my favorite fruits. And in a salad, they bring just the right punch of fresh sweetness.

This fresh summer salad is light, refreshing, & healthy! Packed with fiber, vitamins, minerals, and plant-based fats & protein, just the combo you need to feel satisfied. Add some salmon or chicken for extra staying power!
Slice avocado, chop almonds, chop celery, and cut figs into bite-sized pieces. Add atop lettuce greens onto each of the two servings.
Top with any remaining ingredients and drizzle with dressing upon serving. Enjoy!
