Summer Fig, Almond, & Parmesan Salad

This fresh summer salad is light, refreshing, & healthy! Packed with fiber, vitamins, minerals, and plant-based fats & protein, just the combo you need to feel satisfied. Add some salmon or chicken for extra staying power!


  • 23 cups butter lettuce
  • 1 avocado, sliced
  • 34 fresh figs
  • 2 stalks celery, chopped
  • 1 handful freshly sliced Parmigiano-Reggiano
  • 1/8 cup sliced almonds or walnuts
  • desired dressing of choice (my favorite? Just a mix of olive oil, garlic, and lemon juice)


Slice avocado, chop almonds, chop celery, and cut figs into bite-sized pieces. Add atop lettuce greens onto each of the two servings.

Top with any remaining ingredients and drizzle with dressing upon serving. Enjoy!
