Chewy Blue Spirulina Energy Bars

Nourishing, Chewy Blue Spirulina Energy Bars are on the menu this week!

When you’re on the go, having a delicious & healthy snack on hand can be a lifesaver! I love having easy go-tos to make to have in the fridge throughout the week so I can take to work – some days when I’m working in a rural area I may only have access to vending machine food, and those snacks just don’t make me feel good, help me concentrate at work, or give me energy. These spirulina energy bars are the perfect snack to keep my blood sugar steady, keep me full and satisfied, and also honor my taste buds. Delicious & healthy!

In comes these delicious Blue Spirulina Energy Bars – made with wholesome ingredients that are good for your taste buds AND your health! It’s base if made of nuts and seeds, which bring Omega 3s (important for brain health, heart health, memory), plant-based protein, healthy fats, and fiber, all important nutrients our bodies need for good health. They help keep you full and satisfied due to their fiber content, and also help with gut health. Can’t beat that!

Spirulina Energy Bars (vegan)

These energizing bars are packed with feel-good ingredients to keep you goin’. Plant-based protein, healthy fats, and fiber all combined in a tasty bar that’s convenient for work days, hiking, midday slumps, or post-workout fuel. Gluten Free & Vegan.

Ingredients

Scale
  • 1 cup medjool dates, pitted
  • 1/2 cup raw cashews
  • 1/2 cup raw almonds
  • 1 TBSP chia seeds
  • 1/4 cup hemp seeds
  • 1 TBSP Blue Majik or Spirulina powder
  • 2 tsp vanilla extract
  • 1/4 cup unsweetened coconut flakes
  • 2 TBSP cacao nibs
  • dash of cinnamon

Instructions

Add all ingredients to a food processor and pulse until well combined. Mixture should be sticky and dough-like.

Line a small baking dish with parchment paper and add dough, pressing down until mixture is even and flat. Smooth out with hands or back of spoon. Sprinkle additional coconut flakes on top.

Place dish in the freezer to set for one hour, then remove and cut into bars. Enjoy! Store at room temp in an airtight container.

Notes

Spirulina or Blue Majik is often expensive (but a little goes a looong way, so it lasts a while), but it’s not necessary for good health. Don’t wanna splurge? Replace with matcha powder, which is another go-to bar I make, just as delicious!

Other amazing snacks to try are these Matcha Green Tea Energy Bites or my favorite PB Oat & Chia Energy bites. I like to make a bunch on Sunday and snack on them throughout the week!

Spirulina is also a powerful nutrient in itself-there has been some research pointing to potential antioxidant and anti-inflammatory properties. Either way, its also packed with plant-based protein. It also contains over 100% percent of your daily value of Vitamin B12, usually only found in animal-based foods, so this is a great addition to anyone on a plant-based diet with minimal intake of animal foods. Some of the compounds in Spirulina/Blue Majik could also promote heart health by helping lower cholesterol and triglycerides.
