A perfect springtime salad to add to your routine is this Simply Classic Greek Salad – topped with creamy feta, crispy bell peppers, and hydrating cucumbers. I love to add black olives, red pepper, and local arugula microgreens as well. YUM!
I love adding in some chickpeas as well for extra protein and fiber!

Add all salad ingredients into a large salad bowl.
Mix salad dressing ingredients in a small bowl and whisk until blended. Drizzle over salad and gently toss to coat.
