My husband and I both cleaned our plates when I served this meal, it was definitely one of our favorites! I didn’t have any on hand, but this would also be tasty with some feta cheese crumbled on top.

For the bowls:
- 1 1/2 boneless, skinless chicken breasts or chicken thighs, cut into bite sized pieces
- 1 cup hummus
- 1 1/2 cups cooked quinoa
- 1 large cucumber, sliced thin
- 1 pint cherry tomatoes, halved
- 1 cup microgreens
- 1 bunch fresh parsley, chopped
- 1/2 cup pickled red onions
- other optional add-ins: feta cheese, shredded cabbage, warm pita, olives, etc.
For the Shawarma marinade:
- 2 TBSP olive oil
- 1/2 lemon, juiced
- 1 TBSP maple syrup or honey
- 3 cloves garlic, finely minced
- 1 ½ tsp ground cumin
- 1 ½ tsp smoked paprika
- ¾ teaspoon ground cinnamon
- ¾ teaspoon ground ginger
- ¾ teaspoon dried oregano
- ¾ teaspoon ground turmeric
- 1 tsp salt
- 1 tsp ground black pepper
- 1/4–1/2 tsp cayenne pepper, optional for heat
- Marinate the chicken in advance. Add all marinade ingredients to a large bowl and mix well. Add cut chicken pieces and coat until all pieces are covered. Can cover in plastic wrap (or add all ingredients to ziploc bag) and place in fridge the marinate for at least 1 hr, and up to 2 days.
- Cook quinoa and set aside. Preheat oven to 425 degrees.
- Chop all remaining ingredients.
- Add drained, marinated chicken to a large baking sheet and cook in oven for 15-16 minutes. Then set to broil and broil for 3-4 more minutes until chicken gets brown and caramelizes. Remove from oven and let cool.
- Assemble bowls by diving hummus, quinoa, microgreens, sliced cucumbers, sliced cherry tomatoes, pickled red onions, chicken, and parsley among 4 bowls. Enjoy!

Picked red onions are SO easy to make at home. Simply whisk together in a bowl: 1/2 cup apple cider vinegar or rice vinegar, 2 tsp maple syrup, 1/2 tsp salt, and 1/2 cup hot water. Add to a pickling jar and pour in a diced red onion. Let sit for at least 30 minutes. So simple!
