It unfortunately doesn’t feel like spring out yet…but this meal sure does look quite Spring-like! Fresh, light, and delicious. Easy pan-sautéed salmon with the BEST seasoning, paired with an easy salad – this dish was thrown together sub 20 minutes. I can get down with that.
If you ever go to Charlotte, NC (my hometown), you have got to swing by Savory Spice shop in SouthEnd. It is packed with the most fresh, pure seasonings, spice blends, and every exotic type of salt or sugar you could imagine. A chef’s dream! I used one of their spice blends as a rub on this salmon, and it was divine! You can buy the spice blend online here, or try using just a few of the base ingredients such as: 1 TBSP of maple syrup, 1/4 tsp black pepper, 1/4 tsp turmeric, 1/4 tsp coriander, and 1/4 tsp cinnamon with a dash of sea salt, and you’ll still be just as pleased!

I sauteed the salmon with my favorite local seasoning blend, and paired it with this delicious fresh greens salad, with a copy-cat homemade Tahini Goddess dressing! Simple & Delicious. (GF)
Spray nonstick saute pan with cooking spray, and heat to medium high heat.
Pat salmon filets dry with paper towels, and divide seasoning blend between the two filets and rub into the top of the salmon.
Place salmon filets skin side up on sauté pan, heat for ~5 minutes on the first side, until starting to golden brown. Then flip and cook for an additional 3-4 minutes or until skin starts to crisp.
While salmon is cooking, start to prep the salad dressing ingredients. Mince garlic and scallions, chop the herbs, and add all the dressing ingredients to a food processor and blend until smooth and creamy. Set aside.
Once salmon has cooked, set aside to cool. While salmon cools, prep the vegetables for the salad: chop the fennel and sugar snap peas.
Upon serving, toast the bagel and serve 1/2 per plate, top with warm salmon (garnish with fresh chopped dill), and assemble 1-2 cups of mixed greens topped with half of the remaining salad ingredients. Drizzle with tahini goddess dressing and enjoy immediately!
The salad is delicious on its own – I have a feeling I’ll be making this dressing on repeat and switching up the veggies. Maybe adding in radishes, sliced white onion, and heirloom tomatoes (when they come up in my garden!). A super versatile salad with a creamy dreamy dressing, what’s not to love?
