Satisfying Breakfast Tacos with Eggs, Veggies, & Charred Tortillas


We don’t always have plenty of time in the morning to sit down to a breakfast, let alone cook a balanced breakfast. If you’re in a rush, great on-the options could be: batch-cooked Colorful Veggie Egg Muffins, overnight oats, a pre-prepped smoothie, peanut butter toast with banana, or Pumpkin Spice Baked Oatmeal.

BUT, when you do have the time – maybe a slow weekend morning or a cozy day off, these breakfast tacos are next level. They’re easy, savory, flavorful, delicious, and satisfying – with a beautiful balance of carbs, protein, fat, and fiber to keep you full and satisfied until your next meal or snack.


The secret to the best breakfast tacos? CHARRED TORTILLAS! Simply heat the tortillas for a few seconds under an open gas flame if you have a gas stovetop. OR pat a little water on each tortilla and place on a saute pan on medium-high heat, flipping halfway if you have an electric stovetop. Satisfying Breakfast Tacos

  • 2 tortillas of choice (flour, corn, almond flour, etc.)
  • 2 eggs
  • handful cherry tomatoes, diced
  • handful leafy greens (like spinach or arugula)
  • a few avocado slices
  • salt and pepper, to taste
  • hot sauce, optional


  1. Char tortillas by either heating for a few seconds over gas stove flame, or heat up in a saute pan on both sides. Set aside. 
  2. Top avocado on tortilla and mash.
  3. Add eggs to saute pan with oil or butter and scramble or cook as desired. Want them extra creamy? Add a little bit of milk! Season with salt and pepper, and add to top of charred tortillas & avocado.
  4. Chop tomatoes and add along the greens to tortilla.
  5. Drizzle with hot sauce, season with salt and pepper if desired and enjoy immediately!
