Hearty Winter Harvest Bowl

This Hearty Winter Harvest Bowl is the perfect nourishing, cozy dish packed with satisfying root veggies, wild rice, feta cheese, walnuts, dried cranberries, and chicken. Topped with a maple dijon dressing to pair all the flavors together. My favorite filling dish when I’m craving something healthy during those cold months!

Ingredients

For the Grain Bowl:

  • 1 cup wild rice, uncooked
  • 4 cups water (to prepare rice)
  • 1 cup chopped sweet potatoes
  • 1 TBSP olive oil
  • salt and pepper, to taste
  • 1/4 tsp smoked paprika
  • 1/4 tsp garlic powder
  • 1/4 tsp cinnamon
  • 1 cup chopped brussels sprouts
  • 1 TBSP olive oil
  • salt and pepper, to taste
  • 1/4 tsp garlic powder
  • 4 cups arugula or chopped kale
  • 1/2 cup chopped precooked beets
  • precooked chicken strips, chopped
  • 1/4 cup feta
  • 1/4 cup chopped walnuts
  • 1/4 cup dried cranberries

For the Maple Dijon Dressing:

  • 2 TBSP maple syrup
  • 1/3 cup olive oil
  • 2 TBSP apple cider vinegar
  • 1 heaping TBSP dijon mustard
  • salt and pepper, to taste

Instructions

  1. Preheat oven to 350 degrees and set aside two aluminum foil lined baking sheets.
  2. Cook wild rice according to package directions – 1 cup rice and 4 cups water with salt. Heat to boiling, then turn down to a simmer. Cover and cook for 50-60 minutes.
  3. While rice is cooking, chop your sweet potatoes and add to baking sheet with olive oil. Season with salt, pepper, smoked paprika, garlic powder, and cinnamon. 
  4. Then, chop your brussels sprouts in half and add to second baking sheet with olive oil. Season with salt, pepper, and garlic powder. Place sweet potatoes and brussels in the oven and bake for 30-40 minutes until soft and edges start to crisp.
  5. While rice and veggies are cooking, prepare dressing by whisking together ingredients. Season to taste with salt and pepper and set aside.
  6. Next, chop your chicken, crush your walnuts, and chop your beets.
  7. Once all ingredients are done cooking and cooling, assemble bowls by adding to each (Serves about 4): wild rice, sweet potato, brussels sprouts, beets, handful of arugula, sprinkle of feta cheese, handful of crushed walnuts, sprinkle of dried cranberries, and 3-4 oz. chicken. Drizzle each serving with dressing and enjoy!

Notes

*you can cook your own chicken and roast your own beets, but I decided to take a shortcut with this recipe to make it easier.
