Ingredients

Scale
  • 2 cups pitted Medjool dates
  • 1 cup roasted almond butter
  • 1/4 cup coconut oil
  • 1/2 tsp vanilla extract
  • Dash of sea salt
  • 12 TBSP sesame seeds for topping
  • (other topping ideas: raw cacao nibs, cinnamon, coconut flakes, hemp seeds, freeze-dried berries, etc.)

Instructions

  1. Add all ingredients except sesame seeds to a high powered food processor, blending until a thick, smooth paste forms.
  2. Line an 8 x 8 baking dish with parchment paper.
  3. Spread fudge mixture into dish spreading evenly.
  4. Refrigerate for at least 1 hour before cutting into small squares and serving cold.
  5. Can store in fridge for up to 1 week and in the freezer for up to 1 month.

Dates are what I like to call nature’s candy, they are full of plant-based fiber and natural sugar, and have a caramelly gooey-ness to them that cannot be duplicated. The roasted almond butter brings a dose of healthy fats into the mix, unsaturated fats that can help lower blood cholesterol and fight against heart disease. A win-win!

Want to make this a chocolate fudge??

Simply add a little less almond butter, and 2-3 TBSP cup raw cacao powder and 1-2 TBSP of raw cacao nibs to give it a smooth, chocolatey flavor! That will be my next treat to make for Christmas time…maybe I’ll even add a little peppermint oil to the mix to have some mint chocolate fudge…oh the ideas are flowing!

Happy holiday season!
