Christmas is ALMOST here! Every year Christmas morning my Mom makes me fluffy gluten free pancakes. But this year I wanted to try out something a little different…GINGERBREAD WAFFLES. And boy, are they good.
PrintAdd all wet ingredients to a large bowl (egg, molasses, butter, milk brown sugar). Mix until well incorporated.
In a separate small bowl, mix together the remaining dry ingredients. Slowly pour the dry ingredients into the wet mixture, stirring throughout.
Mix until well blended. Heat waffle iron to medium high heat. Spray both sides evenly with cooking spray/
Scoop batter for 1 waffle and place into waffle iron. Cook for ~4-5 minutes or per waffle iron instructions.
Remove waffle safely with a fork or tongs and set aside to cool. Repeat until all batter is used. Enjoy immediately!
*Reminder: this recipe is Gluten free for those like me that struggle with gluten intolerance or Celiac Disease. Gluten free diets are only recommended for those with these medical issues or specifically prescribed by your physician. A gluten free diet is NOT any healthier than eating a regular diet with gluten.
