These No Bake Chocolate Chip Cookie Dough Bites are SO TASTY! I cannot stop snacking on them! They’re the perfect balanced snack to grab and take on the go. I love to pack a few of these for my work snacks during the week. They taste like a gooey chocolate chip bite, while also fueling you and keeping your blood sugar steady.
They’re oooey, gooey, a little salty, a little sweet, and definitely fulfills that decadent cookie dough craving. Oats provide healthy fiber and whole grains, cashews give you protein and healthy fats, and cinnamon, date syrup, and vanilla give it extra flavoring and sweetness.
These are easily adaptable to any food allergy. Don’t need to restrict gluten or dairy? Simply use regular oats and regular chocolate chips. Lactose intolerant? Stick to dairy-free chocolate chips and those with Celiac Disease or gluten intolerance can simply use gluten-free oats like me.

Simply melt any chocolate chips or a bar, and roll the balls into the chocolate evenly. Roll into cocoa powder and set on your baking sheet or a plate to place in the freezer to harden! So delicious and simple. Even better, get your kids involved in the process!
