Easy Edamame Bean Salad

This easy Edamame Bean Salad is easy to throw together and packed with fiber-rich plant vegetables! Add color and nutrition to your lunch with this simple and flavorful dish.

Ingredients

Scale
  • 3 cups shelled edamame
  • 1 can corn
  • 1 can black beans
  • 1 avocado, diced
  • 1/4 cup diced red onion
  • 12 cups diced cherry tomatoes
  • handful fresh cilantro, chopped
  • juice from 2 limes
  • salt and pepper, to taste

Instructions

Add all ingredients to a large bowl and toss well. Enjoy! Keeps well in the fridge for up to 4-5 days.

Corn, edamame, black beans, and avocado all pack a punch of fiber-great for gut health and satiety.
