Pumpkin Chocolate Chip Edible Cookie Dough

This creamy, dreamy (edible) pumpkin cookie dough is the perfect yummy treat – made with pumpkin puree and cashew butter! A delicious fall snack or dessert.


  • 1/2 cup pumpkin puree
  • 1/4 cup maple syrup
  • 1/2 cup butter, melted (or coconut oil)
  • 1/2 cup creamy cashew butter
  • 1 tsp vanilla extract
  • 1 cup gluten-free all purpose flour
  • 1/4 cup packed brown sugar or granulated sugar
  • pinch of salt
  • 1/4 tsp nutmeg
  • 1/4 tsp cinnamon
  • 1/4 tsp pumpkin pie spice
  • 1/2 cup dark chocolate chips


  1. Mix together wet ingredients in a large bowl. Mix until well combined and smooth.
  2. Add in flour slowly while stirring well until combined. Add in remaining ingredients except for the chocolate chips. Mix until smooth and creamy.
  3. Fold in chocolate chips. Enjoy!
