Any and all fresh ingredients are welcome! I typically use a base of chickpeas + cucumber + tomato and add in whatever else I have on hand. This week I had some leftover shredded carrots from a Salmon Poke Bowl I made, some red onion, avocado, and sun-dried tomatoes. Top with fresh or dried dill, salt, pepper, lemon juice, red wine vinegar, and some high quality olive oil and you’ve got yourself a delicious meal!
I also sometimes sprinkle some hemp seeds or pumpkin seeds on top for a little protein and crunch. Walnuts would probably be delicious, too! Have fun and get creative with it. And the more it marinates in the fridge, the more delicious it even gets!
