GF Birthday Ice Cream Sandwiches (I’m turning 25!)

The big 2-5!

My birthday this week calls for an epic birthday treat, so here it is. Gluten free ice cream sandwiches with a healthier filling: Vanilla Bean Halo Top Light Ice Cream! (aka heaven)8 (1 of 1)1 (1 of 1)

These are so easy to make with a simple little trick I learned from Pinterest. 😉

With your pint of icecream laying on its side, Use a large sharp knife to cute a slice as thick as you’d want for your ice cream sandwich filling. Then you can top each side with your cookies and unwrap the icecream pint wrapper to leave a perfectly cylinder ice cream sandwich.

GF Birthday Ice Cream Sandwiches (I’m turning 25!)

Ingredients

Scale
  • Store-bought gluten free chocolate chip cookie dough (I used Eat Pastry brand)
  • 1 pint vanilla bean or birthday cake flavor Halo Top icecream
  • 2 TBSP Cookie Dough Muscle Frosting (optional)

Instructions

  1. Preheat oven to 350 degrees.
  2. Spray cookie sheet with nonstick spray.
  3. Make 4 large circular cookies out of the cookie dough and bake according to package directions.
  4. Let cookies cool. While they are cooling, cut pint of icecream on side with ~1-1.5 in thickness.
  5. Once cookies are cool, place cookies on each side of cut icecream, then remove wrapper.
  6. Place in freezer to set.
  7. When ready to eat, let soften on counter for a minute or two.
  8. Enjoy!

This cookie dough is seriously heavenly…found at my local Whole Foods. It is egg-less as well, so I don’t feel guilty spooning it straight out of the container. 😉 I cant lie, this is actually the third time I’ve bought this cookie dough and the FIRST time I’m actually baking them…oops. Sorry not sorry I prefer the dough. But for these icecream sandwiches? They make the perfect cookies. Soft, chewy, yet sturdy enough to hold up.2 (1 of 1) 5 (1 of 1)  7 (1 of 1)6 (1 of 1)

And what’s so special about this Halo Top? Halo Top is low calorie (only around 250 calories for the entire pint! Yes you read that correctly…) A normal serving of regular icecream runs anywhere over 200 calories per 1/2 cup. A 1/2 cup portion of Halo Top is only 60 calories. You can’t beat that! And it actually TASTES like ice cream. Other “light” ice cream wanna-bes (cough, cough Artic Zero) don’t taste anything like icecream. This stuff, however, is AMAZING. It actually contains real milk and cream, but with added protein, zero artificial flavors, and less fat than regular ice cream. The birthday cake flavor is actually my favorite but unfortunately the store was out. Vanilla bean was new to me but it may give birthday cake a run for its money…now I can say I easily have two favorites tied for first.9 (1 of 1)And what’s that awesome dollup of goodness on the very top? Cookie Dough Muscle Icing by Youfresh Naturals…a healthier version of icing made from cashews, whey protein isolate, coconut sugar, unsweetened mini chocolate chips, ghee, vanilla extract, etc. {All much better for you than the store-bought crap!}10 (1 of 1)Happy birthday to me! 🙂
