We all probably know the benefits to eating our greens…they provide ample fiber and vitamins and minerals to keep our GI tracts healthy, protect us from getting sick, and preventing disease like certain cancers, Diabetes, and Heart Disease. Do you ever struggle with making greens tasty? Or having something other than your go-to salad? I like my greens to be flavorful, but also let the freshness shine. The secret tip with this massaged kale salad is to invest in some GOOD olive oil. I mean the REAL DEAL stuff. I got some Italian Olive Oil gifted to me from my parents and I am extremely picky with how I use it…but it definitely goes on this salad. You can truly taste the difference of high quality olive oil!
Another great thing about this salad? Not only does it take just 5 MINUTES TO MAKE, but it’s also a great base to add other ingredients to! I like to add extra garlic and salt to mine, and top it with crispy chickpeas, tomatoes, avocado and cucumber sometimes to bulk it up. Other times I truly like it just as it is above, as a side with other dishes like these Healthy Baked Chicken Tenders or my favorite Super Simple Salmon Burgers. Either way, make it your own and enjoy it as you like! A simple way to simply add more greens into your eating pattern, a wonderful non-diet healthy habit.
