Satisfying Breakfast Tacos

Ingredients

  • 2 tortillas of choice (flour, corn, almond flour, etc.)
  • 2 eggs
  • handful cherry tomatoes, diced
  • handful leafy greens (like spinach or arugula)
  • a few avocado slices
  • salt and pepper, to taste
  • hot sauce, optional

Instructions

  1. Char tortillas by either heating for a few seconds over gas stove flame, or heat up in a saute pan on both sides. Set aside. 
  2. Top avocado on tortilla and mash.
  3. Add eggs to saute pan with oil or butter and scramble or cook as desired. Want them extra creamy? Add a little bit of milk! Season with salt and pepper, and add to top of charred tortillas & avocado.
  4. Chop tomatoes and add along the greens to tortilla.
  5. Drizzle with hot sauce, season with salt and pepper if desired and enjoy immediately!

Notes

*Have Celiac Disease and need this recipe to be Gluten Free? Try corn tortillas or almond flour tortillas, such as Siete Foods.
