Ingredients

Scale
  • 3 ½ cups Cup4Cup gluten-free flour, plus more for rolling the dough
  • 2 tsp active dry yeast
  • 4 ½ tsp granulated sugar
  • ½ cup warm water
  • 1 ½ tsp salt
  • ⅓ cup + ½ cup + a few tablespoon warm water
  • olive oil, for brushing
  • 1 egg + 1 TBSP water to make egg wash
  • Topping: Trader Joe’s “Everything but the Bagel seasoning” Or a mixture of minced garlic, poppy seeds, sesame seeds, onion powder

Instructions

  1. Activate the yeast by adding yeast, sugar, and 1/2 cup warm water into a small bowl, cover with kitchen towel. Do NOT mix together, but instead let sit for 5-6 minutes until you mix. It should then start to foam, which is desired.
  2. Next, add flour and salt to a large bowl and mix. Add yeast mixture to the middle, plus the remaining water: 1/3 cup and 1/2 cup, adding small amounts at a time. Start to combine well with a large wooden spoon or mixing utensil. The dough should still be a bit dry, so add in 1-4 TBSP warm water (1 at a time) until the dough rolls into a slick ball of dough. It should be no longer dry, but moist (but not soaking wet).
  3. Once dough is formed into a large bowl, transfer to a floured countertop and knead for 2-3 minutes. Brush dough ball with olive oil, and place in a large bowl. Cover with moist paper towel and let rise in a warm spot (I.e. next to the preheated oven) for 1 hour.
  4. once the dough has risen, take out into countertop (don’t add any flour!) and cut into 8 pieces.
  5. Form each piece into a ball and gently press down into the center with your finger, creating a hole. Gently shape into bagel formation and add to a lightly oiled baking sheet. Repeat for all dough, then let sit for a few minutes to settle.
  6. Preheat oven to 425 degrees. While oven is preheating, fill large pot with water and set to high heat to boil. Gently, one by one, place bagel in boiling water with a slotted spoon. Boil for just 1 minute, then set aside. Repeat for all bagels (can boil ~4 at a time).
  7. Places boiled bagels on baking sheet and gently brush each with the egg wash. Add everything seasoning toppings. Bake for 20-25 minutes or until golden brown. Let cool and enjoy! Store in an airtight container for 3-4 days. To reheat, simply microwave and top with desired toppings such as cream cheese, smoked salmon, peanut butter, or butter!
