Try this Fall Apple Walnut Salad with Blue Cheese and Dijon Dressing for a classically delicious entree or side. Easy to make and oh so delicious! A family favorite during autumn.

Ingredients

For the Salad:

  • 1 container local butter leaf lettuce (or mixed greens, kale, endive, etc,)
  • 1/2 green apple, sliced thin
  • 1/4 cup walnuts, chopped
  • 1/4 cup dried cranberries
  • 1/4 large red onion, diced
  • crumbled blue cheese for topping
  • salt & pepper, as desired

For the Dressing:

  • 1/4 cup olive oil
  • 2 TBSP balsamic vinegar
  • 2 tsp honey
  • 1/2 TBSP dijon mustard
  • sea salt, to taste

Instructions

  1. Divide mixed greens to each plate or bowl. Slice apple into small half moons and add to each salad. Sprinkle each salad with dried cranberries, walnuts, diced red onion, and blue cheese.
  2. Whisk together all dressing ingredients and drizzle among each salad.
  3. Enjoy immediately!
