These Crunchy Quinoa Chocolate Cashew Butter Cups are simple to make at home and only require 3 ingredients! Make this wholesome treat for the whole family – everyone will be sure to love!

Ingredients

  • 1 1/2 cup chocolate chips
  • 1 cup puffed quinoa (directions below) OR store-bought puffed brown rice cereal
  • pinch of salt
  • 1/4 cup creamy cashew butter

Instructions

  1. Heat a sauce pan over medium high heat until it’s HOT and add in a few kernels of uncooked quinoa. If they start to pop, add in the rest of the quinoa in a single layer on the pan. Toast for ~1 minute, tossing regularly to prevent burning. Once the popping slows (like popcorn) and it starts to smell nutty, it’s done. Remove from heat and set aside to cool.
  2. While puffed quinoa cools, melt chocolate in microwave safe dish for ~2 minutes, pausing halfway to stir.
  3. Pour puffed quinoa into melted chocolate along with salt and cashew butter. Stir until mixed well.
  4. Pour into peanut butter cup molds and freeze for at least 30 minutes. Enjoy!

Notes

Store in freezer.

You can also make into bars or cut into bite-sized pieces.
