Chilled Cucumber Avocado Soup (veg)

An easy, and super refreshing summertime soup, served cold! Packed with healthy fats, protein, and hydrating cucumber. Just what your body craves in the heat! A light and healthy soup ready to cool you down on even the hottest of days.

Ingredients

Scale
  • 1 cup plain 2% Greek Yogurt
  • 1 avocado
  • 1 cucumber
  • 1/4 cup cilantro
  • 12 jalapeƱos
  • 1 lime, juiced
  • 1/2 lemon, juiced
  • sea salt and black pepper, to taste (may need more than you think due to the water content of this recipe)
  • 2 garlic cloves
  • 1 cup cold water (start with 1/4 cup and add as needed for desired consistency)

Instructions

Add all ingredients to a high-powered blender or food processor (start with just 1/4 cup water) and process until smooth and creamy. Add additional cold water as needed for consistency.

Enjoy cold!
