Blender Spinach Banana Muffins

Easy green muffins made in the blender, no mixing required! Packed with bananas, egg, milk, and oats, these staples make for a delicious, warm muffin to fuel your day.

Ingredients

  • 2 small ripe bananas
  • 3/4 cup milk of choice
  • 1 egg
  • 1 cup old fashioned rolled oats
  • 1 tsp baking soda
  • 1 tsp vanilla extract
  • 2 TBSP chia seeds
  • 12 TBSP creamy nut butter
  • 2 TBSP vegetable oil, melted butter, or any neutral oil
  • 2 cups spinach, packed
  • 1/4 cup honey or agave
  • pinch of salt
  • 1 cup flour of choice (All purpose, almond, whole wheat, etc.)
  • chocolate chips, optional for topping

Instructions

  1. Preheat oven to 375 degrees and spray muffin tin with nonstick spray. 
  2. Blend all ingredients (except flour and chocolate chips) in a high speed blender. Blend on high until smooth and creamy. You may need to pause periodically and scrape down the sides.
  3. Next, add in flour and pulse until incorporated.
  4. Pour batter in greased muffin tin, and sprinkle each top with chocolate chips.
  5. Bake muffins for 15-18 minutes, or until a toothpick comes out clean. Enjoy!

Notes

*to make gluten free? Choose certified gluten free oats and use gluten free all purpose flour or almond flour.
