Speedy Weeknight Meal – Cauliflower Gnocchi & Chicken Sausage

The speediest and most satisfying meal when you don’t feel like cooking! Healthy AND delicious. A total crowd pleaser!

Ingredients

Scale

1 package Trader Joe’s cauliflower gnocchi

1 package organic chicken sausage of choice (I used one blended with feta and spinach – delicious!)

1 cup chopped cherry tomatoes

1 large bunch kale

sea salt, to taste

black pepper, to taste

garlic powder, to taste

Cashew ‘parmesan’, optional (I always use the recipe from Minimalist Baker)

olive oil or grass-fed butter, for cooking

Instructions

 In a saute pan, add your butter or olive oil and heat to medium-high heat. Add the package of frozen cauliflower gnocchi and let cook for ~5 minutes before touching or turning. Flip over and cook for an additional 5-7 minutes.

Top gnocchi with desired parmesan, salt, and pepper.

In another pan, add olive oil and heat sliced chicken sausage until warm and starting to brown on either side. Once almost ready, add in chopped cherry tomatoes and chopped kale and sautéuntil soft. Add garlic powder, salt, and pepper.

Once all items are cooked, add to a large bowl and enjoy immediately!
