GF Birthday Ice Cream Sandwiches (I’m turning 25!)

- Store-bought gluten free chocolate chip cookie dough (I used Eat Pastry brand)
- 1 pint vanilla bean or birthday cake flavor Halo Top icecream
- 2 TBSP Cookie Dough Muscle Frosting (optional)
- Preheat oven to 350 degrees.
- Spray cookie sheet with nonstick spray.
- Make 4 large circular cookies out of the cookie dough and bake according to package directions.
- Let cookies cool. While they are cooling, cut pint of icecream on side with ~1-1.5 in thickness.
- Once cookies are cool, place cookies on each side of cut icecream, then remove wrapper.
- Place in freezer to set.
- When ready to eat, let soften on counter for a minute or two.
- Enjoy!
